A slow menu in the room underneath the dining room.
The cellar was a coal store and then a stockroom and is now eighteen seats under a low brick ceiling. It is warm, it is loud, and the service is deliberately slow.
Five courses over about three hours, built around whatever has been curing, pickling, or ageing long enough to be worth serving. The room takes one booking a night.
If you want to eat quickly, eat upstairs.
